The Art of High Tea The art of tea blending has achieved worldwide recognition in recent years and tea parties are all the rage. In this class, you will learn how to make foods to serve a complete High Tea event: Three varieties of Scones (ginger cardamom, matcha rose, classic buttermilk) Three varieties of Finger Sandwiches (cucumber dill, fig and proscuitto, chicken sausage and mango) Three varieties of Sweets (blood orange bars, banana mango puffs, plantain balls) Sampling of Black, Green, White, Blooming Flower and Herbal Tisane Teas.
Unique Ingredients of the World Living in NY is a blessing in that we have access to global foods. There is not a single ingredients that cannot be found in NY - you just have to know where to find it. This class will you to some global ingredients from various continents, how to prepare them and where they can be purchased in the city: Breadfruit Puffs (Dominica) Drumstick (Indian vegetable) Red Rice Pulao (India) Dragonfruit, Jicama, Chayote Salad (China) Banana Bud Salad with Prawns (Malaysia) Black Rice Pudding (Thailand)
Cooking with Fruit In this class, you will learn how to incorporate fruit in all meals from salad to dessert. Curries of the World What is referred to as curry is simply a masala (mixture of spices). Curry was a word invented by the British, a variation of a Tamil word, to describe the spicy stews of India, and the use of this word has spread internationally. Curries vary greatly from country to country and even from region to region within the same country. International Fusion In this class, you will learn how to prepare a 5 course meal, using global inspiration. You will definitely be able ti impress guests at your next dinner party!!! Quick Breads Quick Breads are one of the easiest things to make as accompaniments to any meal or even on their own, as dessert. We feel all meals are social events, meant to be shared at
leisure. You cannot savor all the
complex flavors in a Sri Lankan Jackfruit Curry if you are rushed. For this reason, classes may run up to 5
hours, if we are having too much fun enjoying each other’s company.
Private Cooking Classes (in your home or at a local incubator kitchen) are also available. Price commensurate with client specific menu.
